lemon cheese

ingredient :

2 litter goat milk
150 ml lemon juice
1 1/2 tsp salt

method :
1.heat the milk over simmering water to exactly 38̊ c. 


2. remove from the heat and add the lemon juice. stir very gently and briefly until the milk mixture start to curdle or thicken.





3. rest at room temperature for 3 to 4 hours.

WHOLE – MILK RICOTTA CHEESE
Ingredient :
1 tsp citric acid
4 litter fresh milk
60 ml water
2 tsp salt


Method:
1.      Preheat the pot and put milk into the pot.



2.      Dissolve the citric acid with water and into the pot.






3.      When the temperature reaches 85̊ c, close the fire.



4.      Put some salt and lemon juice into the pot.





5.      Strain the milk into the chinese cloth and hang it to reduce the water.









6.      After that, compress it with heavy things.

7.      Weigh after all the procedure performed.  330g




8.      Mix it with salt as needed until creamy.

cheese is a generic term for a diverse group 
milk-based food products.Cheese consists of proteins and fat from milk.


so today, we would like to introduce you about
 our chosen experiment :home made cheese.




let's begin the test...haha..;)


the ingredient are:
and not to forget the salt as the flavor okey....;P


method:


a;) Soak the ladle and boil the pot with the hot water and salt to sanitize the bacteria.





b;) boil the fresh milk in a pot until bubbling with a medium fire.
(Around 15 minutes with the temperature
65'c-68'c)...add some salt ya...



c;) put the lemon juice and stir well until it became curds on the
top of the milk.



d;) strain the milk using the cheese cloth to separate the whey 
with the curd. dry up until 2 hours.

e;) after the curds has been dry, put it on the flat surface and press
it with something heavy around 20-30 minutes.


TO GET THE CREAM CHEESE

a;) put the dry curd into the mixer, mix together 
with the hook until become creamy.


b;) lastly, add some salt to flavor.
